Blueberry Yogurt Bark

When even the mornings are hot, you know it’s going to be a super sweaty summer day. But thankfully, you can start your mornings with something ice cold and nutritious! This blueberry yogurt bark is my go to summer breakfast. It’s delicious, it’s cold, it’s healthy, it’s (relatively) cheap. SOLD!

It’s so easy to meal prep. Just spread Greek yogurt over parchment paper and top with honey, blueberries, and walnuts, and throw it in the freezer. Done!

Plus I say that it’s cheap for a good reason. Usually recipes with plain Greek yogurt can cost a pretty penny because you use so much of it. But since you’re spreading the yogurt thin in this recipe, it seems to go a longer way. And just one 3”to 4” piece of bark fills me up in the hot mornings.

As for the walnuts, you can really use any kind of nuts that you like or that you found on sale. I’ve been on a walnut kick lately, hence the walnuts. But almonds or cashews could work too! You can also feel free to mix it up, and put some homemade granola on top! Or switch out the blueberries for strawberries or another kind of fruit. The sky is the limit with frozen yogurt bark!

The easiest breakfast you'll ever prep for! Blueberry Yogurt bark is my go to breakfast for the warm summers (or fall)


  • Plain Greek yogurt
  • Honey
  • Blueberries
  • Walnuts
  • Step 1 Spread Greek yogurt on a parchment lined baking sheet about ½ inch thick.
  • Step 2 Drizzle honey over the yogurt
  • Step 3 Sprinkle on blueberries and walnuts
  • Step 4 Freeze, then break into pieces when completely frozen and store in a freezer proof bag.
